Saddleback Pork Tenderloin, also known as the pork fillet is a lean cut, packed with porky flavour.
A very tender cut which should be treated gently. The Saddleback tenderloin should be used in the same way as a fine cut of beef fillet, lightly seasoned with salt and pepper then seared or grilled until medium rare.
